Capital Seafood Grill Commercial Custom All Glass Custom Wine Cellar Project

 Hi, I’m Jerry Wilson. I’m the founder of Coastal Custom Wine Cellars and I’m proud and excited to take you on a short tour of a modern commercial wine cellar that we recently created for a restaurant in Orange County, California.

Specifically located in Irvine, the restaurant Capital Seafood Grill is situated within the Irvine Spectrum Mall. We will take you through some of the different phases of construction, share some photographs, and some design packages with you, and show you some completed photographs as well. We will so do to enable you to see how the whole process went.

Commercial Wine Cellars Designs – The First Step

We were contacted initially in July of 2011 and after some consultation and a site visit, we created a commercial wine cellar design for them. The room wasn’t very large as 7 feet by 7 feet with a 10-foot ceiling. This is an overhead view or plan view here of the wine room. This wall right here is the only solid wall that we had to work with.

The left side wall had incorporated the entry was full height, glass walls. So, it didn’t pose a problem. It’s something that we do often for the hospitality industry.

Custom Commercial Wine Cellar Design Elements

We did some other pretty cool features. This is a custom wine display here that you’ll better understand when we looked at some photographs, but this is a one-of-a-kind display and storage system along this particular wall that, uh, no one else in the country actually has the other walls.

We utilized floor-to-ceiling mount frames that we secured single double and triple depth, horizontal displays to overall, 1,011 bottles total capacity.

As we were working with a raw canvas, we had some construction to do, When the framers were on site, we instructed them to drop the ceiling down where we incorporated some special lighting.

Commercial Wine Cellar Cooling Equipment

Another key design element is the need to design in commercial wine cellar refrigeration equipment. As you might imagine in a total glass enclosed room, the client did not want that. We utilized a Cellarpro product a ducted self-contained ducted air handler. We installed it 20 feet from the wine room and up in the ceiling. We ducked the air to and from the wine room.

We also contracted a local glass design company; they built the commercial glass framework for us. We also put some 3/4-inch plywood around the perimeter so that we could secure the floor-to-ceiling frames and have a good, good very firm fit. The glass company did their job for us very well. We’re very happy about that. We had the wine racks delivered on-site and we began construction.

As you can see there is floor to ceiling mount frames. This is the custom feature that I mentioned that is specific to Capital Seafood Grill a little bit further along.

We moved this right-side wall. Here is the only solid wall that we had to work with. These style racks are secured to the wall so there is no need for the floor-to-ceiling mount frame in that location.

As you can see up here at the very top, we have the ducting and the registers installed. So now the same wall obviously completed, and here I am standing in the wine room right next to the solid wall. Lots of displays, not only at a 15-degree pitch here, which is called the presentation row, but as you can see the models laying laterally or sideways on the wall, so you see the full length of it.

Floating Wine Cellar Displays

It is a unique wine racking system that gives the illusion as if the bottles are floating versus the traditional wood racking. So, you see a cleaner more contemporary appearance.

The display row presentation rack is the custom feature that I spoke of. The pictures really do not do justice. It is quite a visual display for the restaurant. Here is another angle from the floor, looking up again, you don’t really see any racking. All you see are the bottles. That is an ideal situation, especially in a restaurant or a hotel.

The visual impact on the restaurant’s customers makes them thirsty for wine. Here is a little bit more of a close-up picture of that custom presentation row that I mentioned, get a full-height picture of the wine room.
